Dear Diary,

*beepbeepbeepBEEPBEEP!!* *fumble* *thud* *BUZZZBUZZZ!*.

The ‘glorious’ sound of the mobile phone alarm hitting the wooden floor at 5.45 in the morning, and continuing to vibrate its frustration much like an annoyed bumble bee, annoyed me (read: pissed me off) to an unusual degree yesterday morning. I felt an irritating tickle in the back of my throat, peeked open one eye only to be hit by the bright glare of the morning sun, and couldn’t breathe through my nose.

Damn. Staying up late to finish an assignment and marching through the day on 3 hours of sleep had caught up with me. Stupid cold.

Dear Diary,

Today was a much better day than yesterday. I slept in, skipped uni so as to not infect anyone else, and ate kaya on toast for breakfast (*heart*). Then I spent the morning learning how neurons work (okay, so that part wasn’t so fun), all the while tempted by the smell of the soup I had bubbling away on the stove.

Chicken soup. Tomatoes. Carrots. Potatoes. Chickpeas. Israeli cous cous. Persian fetta. Mmm. This is food for a chilly day, or those days when it’s just too hard to get out of bed.

Minestrone Soup

1/2 brown onion, chopped

1 carrot, diced

1 potato, diced

1 can diced Italian Tomatoes

1/2 can water

about 500mL chicken stock

1 tsp italian herbs

shredded chicken breast

1/2 cup chickpeas

3/4 cup Israeli or pearl couscous (substitute any small pasta here like risoni or those cute little stars)

Salt/pepper/sugar to taste

Olive oil

Optional: bacon, Persian fetta, crusty bread to serve.

Saute onion and garlic in olive oil until fragrant and translucent. Add bacon,if using, and carrot and potato. Saute for about 7-8 minutes, until vegetables become slightly tender. Add the canned tomatoes, swirl water in the can to get the last bits out and add to the pot. Add chicken stock (preferably homemade for uber healing qualities) and herbs and bring to a boil. Turn the heat down, cover and simmer for 30 minutes or until vegetables are soft.

Throw in the chicken, chickpeas and couscous, and cover, simmering until couscous is al dente (about 15 minutes for me). Remove lid, season with 2parts sugar to 1 part salt, and pepper to taste. Stir and serve piping hot with parmesan or crumbled Persian fetta on top, and crusty bread on the side.

  4. This time of year sucks. Keep getting requests to take out university lecturers but policy prevents me because the potential clients can’t pay. Usually just end up proofreading assignments instead. Less pay, but less stress.

    Stay alive. The alternative is not so fun.
